There are a number of various species of dolphins to be found off the Kauai coastline but the two you have the greatest likelihood of seeing will be the Bottlenose Dolphins and the Spinner Dolphins. The Bottlenose are the larger of the two types but the Spinner's are perhaps the most fun.
